  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Add the sliced mushrooms to the skillet. Cook until golden brown and moisture has evaporated (7-10 minutes).
  3. Stir in Arborio rice, ensuring each grain is coated with oil. Toast for about 2 minutes.
  4. Gradually add the warm vegetable broth one ladle at a time, stirring constantly until absorbed before adding more. Continue for 18-20 minutes until the rice is creamy and al dente.
  5. Remove from heat and stir in remaining butter and Parmesan cheese until melted. Adjust seasoning as needed.
  6. Serve immediately while warm, garnished with extra Parmesan or herbs if desired.
