  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 3 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by cleaning and slicing the mushrooms, mincing the garlic, and chopping the thyme.
  2. In a large skillet, heat olive oil and butter over medium heat. Season chicken breasts with salt and pepper, then sear them for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add mushrooms and garlic; sauté for about 4-5 minutes until tender.
  4. Pour in chicken broth while scraping up any browned bits from the pan. Stir in heavy cream and thyme; simmer for 3-4 minutes until thickened.
  5. Return chicken to the skillet, allowing it to simmer for another 5 minutes or until cooked through (internal temperature reaches 165°F).
  6. Serve over rice or pasta, garnished with fresh herbs if desired.
