Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, grated
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • ½ cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop onion and garlic finely; rinse broccoli and cut into bite-sized pieces.
  2. Heat olive oil in a skillet over medium heat. Add onions and cook until translucent (about 4 minutes), then stir in garlic until fragrant.
  3. Add orzo and vegetable broth to the skillet. Bring to a simmer, stirring occasionally.
