  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping onion, garlic, carrots, and celery.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent (about 5 minutes).
  3. Add minced garlic and thyme; stir until fragrant (about 1 minute).
  4. Incorporate white beans and vegetable broth; stir well.
  5. Bring to a gentle boil and then lower the heat to simmer uncovered for 30-40 minutes until slightly thickened.
  6. For creaminess, blend part of the soup with an immersion blender while keeping some beans whole.
