  • 2 lbs beef chuck roast, diced
  • 3 medium sweet potatoes, chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 large carrots, sliced
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large pot or Dutch oven over medium heat. Add olive oil.
  2. Sauté diced onions and minced garlic until translucent (3-4 minutes).
  3. Increase heat to medium-high. Add beef chunks and brown on all sides.
  4. Stir in sweet potatoes, carrots, thyme, bay leaves, salt, pepper, and beef broth.
  5. Bring to a boil; reduce heat to low. Cover and simmer for 1.5 hours until beef is tender.
  6. Remove bay leaves before serving.
