  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh rosemary leaves, chopped
  • 1 tbsp lemon juice
  • Salt & pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes), then add minced garlic and sauté for an additional minute.
  2. Stir in the drained white beans and vegetable broth. Bring to a gentle boil.
  3. Add chopped rosemary, salt, and pepper. Simmer for 15 minutes to allow flavors to meld.
  4. Blend the soup using an immersion blender until creamy but still slightly textured.
  5. Stir in lemon juice before serving.
