  • 1 cup cooked rice (white or brown)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce (low-sodium recommended)
  • 2 green onions (sliced)
  • 1 tbsp olive oil
  • Your favorite sauce (teriyaki, sriracha, etc.)

Instructions

  1. Cook rice according to package instructions.
  2. While rice is cooking, heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté for about 2 minutes until fragrant.
