  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, garlic, ginger, salt, pepper, and half the curry powder. Mix until just combined.
  2. Roll the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs until golden brown on all sides (about 8-10 minutes). Transfer to a plate.
  4. In the same skillet, add remaining curry powder and cook for 30 seconds. Pour in coconut milk and bring to a gentle simmer.
  5. Return meatballs to the skillet and cover; simmer for about 15 minutes.
  6. Stir in lime juice and cilantro before serving warm over rice or noodles.
